Amazing Apple Crumble Cupcakes

Apple desserts are my absolute favorite, which is certainly a good thing since my apple picking trip this autumn left me with tons of fresh apples to bake with. I tried this apple crumble cupcake recipe earlier this month and am so happy I did! This one is definitely going into the family recipe box. This recipe was adapted from the UK-based lifestyle blogger Zoella, so it took a lot of math to convert all the measurements and research to find the US equivalent of some of the ingredients (what the heck is caster sugar?!). Luckily, I broke it down and Americanized the recipe for you. These were tons of fun to make and even more enjoyable to eat. I’ll definitely be bringing them around to my Thanksgiving dessert table.

Cupcake Recipe:

  • 2 eggs
  • 2 cups of flour
  • 1 cup of sugar
  • half a cup plus 1/10 of a stick of butter
  • 2 tablespoons of baking powder
  • 1 tablespoon of vanilla extract
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of salt
  • 4 apples
  1. Peel, core and dice apples. Put in a saucepan and cover in water. Bring the water to a boil and simmer the apples until they are soft, about 5-10 minutes. Let cool.
  2. Cream together the butter and sugar. Beat with a mixer for about 5-8 minutes until super fluffy.
  3. Add vanilla extract and eggs and beat together.
  4. Add flour, baking powder, salt and cinnamon and mix together.
  5. Fold in the apples gently.
  6. Spoon the mixture into lined cupcake tins. Bake 15-20 minutes at 340 degrees Fahrenheit.

Icing Recipe

  • 1/2 a cup plus 2 tablespoons of brown sugar
  • 1 teaspoon of cinnamon
  • 1 teaspoon of vanilla extract
  • 1 cup of butter plus 1/2 teaspoon
  1. Beat the butter, brown sugar, cinnamon and vanilla extract for 5-7 minutes until light and fluffy.
  2. Add the sugar in slowly and beat at low-speed.
  3. If necessary, add whole milk to lighten the icing. It should be light, creamy and fluffy while being able to maintain its shape.

Crumble Topping

  • 1/4 cup of sugar plus two tablespoons
  • 1/3 cup of butter plus 1 1/2 tablespoons
  • 1 1/4 cup of flour
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of cinnamon
  1. Use your hands to combine butter, flour, cinnamon and vanilla until small crumbles form. Add in the sugar and continue to combine.
  2. Line a cookie sheet with wax paper and spread the crumble mixture over it. Bake for 10 minutes and take out the mixture and stir to mix it up. Bake for an additional 10 minutes until golden brown.

Putting it all together…

  1. When your cupcakes are completely cool, put a small layer of icing on top and sprinkle some crumble topping so it sticks.
  2. You can leave your cupcakes like that or pipe additional frosting on top. I think they look extra festive this way. The more crumbles the merrier – so add some more on top as well.
